Creamy Vegetarian White Chili

Ingredients

  • 1 tablespoon olive oil
  •  
  • 1 onion, diced
  •  
  • 1 green chili, deseeded and chopped
  •  
  • 3 cloves garlic
  •  
  • 1 ½ teaspoons cumin
  •  
  • 1 teaspoon dried oregano
  •  
  • 2 tablespoons flour
  •  
  • 2 cups vegetable broth
  •  
  • 2, 15.5 oz cans cannellini beans, drained and rinsed
  •  
  • ½ frozen corn
  •  
  • Juice of 1 small lime
  •  
  • ½ cup plain Greek yogurt
  •  
  • Salt and pepper to taste
  •  
  • Optional garnish: cilantro, avocado, plain Greek yogurt, jalapeno

Directions

  • In a large pot, heat the olive oil and onion over medium heat for 4-5 minutes until translucent.

  • Add the green chili and garlic and continue to cook for another minute until fragrant. Stir in the cumin and oregano and cook for 30 more seconds.
  •  
  • Stir in the flour until absorbed, then add half of the vegetable broth. Stir continuously until you have a creamy paste without any lumps, then add the rest of the broth.
  •  
  • Add the beans and corn and simmer for 10-15 minutes. Stir in the lime juice and plain Greek yogurt and salt and pepper to taste. Heat 1-2 minutes.
  •  
  • Serve hot with garnish if desired.
