Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 1 green chili, deseeded and chopped
- 3 cloves garlic
- 1 ½ teaspoons cumin
- 1 teaspoon dried oregano
- 2 tablespoons flour
- 2 cups vegetable broth
- 2, 15.5 oz cans cannellini beans, drained and rinsed
- ½ frozen corn
- Juice of 1 small lime
- ½ cup plain Greek yogurt
- Salt and pepper to taste
- Optional garnish: cilantro, avocado, plain Greek yogurt, jalapeno

Directions
- In a large pot, heat the olive oil and onion over medium heat for 4-5 minutes until translucent.
- Add the green chili and garlic and continue to cook for another minute until fragrant. Stir in the cumin and oregano and cook for 30 more seconds.
- Stir in the flour until absorbed, then add half of the vegetable broth. Stir continuously until you have a creamy paste without any lumps, then add the rest of the broth.
- Add the beans and corn and simmer for 10-15 minutes. Stir in the lime juice and plain Greek yogurt and salt and pepper to taste. Heat 1-2 minutes.
- Serve hot with garnish if desired.
