Turkey and Vegetable Roll-Ups

Ingredients:

8 slices deli roasted turkey
4 ounces reduced-fat cream cheese, softened
½ teaspoon dried dill weed
1 cup shredded carrot
½ cup coarsely shredded zucchini
½ cup finely chopped bell pepper

Directions:

  1. On each slice of turkey, spread cream cheese.
  2. Sprinkle with dill weed.
  3. Top with carrot, zucchini, and bell pepper.
  4. Tightly roll up turkey slices.
  5. Cover and chill for 1 hour or until ready to serve. Cut rolls crosswise into 1 inch slices.
