Tortilla Pizza with Pesto, Tomatoes and Feta

Servings: 2 (Size: ½ prepared pizza)

Ingredients:

1 whole wheat tortilla
½ cup prepared pesto
4 ripe plum tomatoes, thinly sliced
½ cup crumbled feta cheese
Freshly ground pepper, to taste
¼ cup lightly packed fresh basil leaves, torn or 1 tablespoon dry basil

Directions:

  1. Pre-cook the tortilla by placing it in the oven at 350 degrees until it is brown and crisp.
  2. Spread the pesto over the entire tortilla, then add the tomato slices, feta and basil over the top.
  3. Place in the oven at 350 degrees for about 10-15 minutes.
  4. Sprinkle with any toppings you prefer and serve immediately.
