Pumpkin Fritters

Recipe modified by Strive for Wellness®

Servings: 10 (Size: 1 fritter)

Ingredients:

2 cups canned pumpkin puree
¾ cup cooked oats (prepare according to package)
1 egg
¾ cup white whole wheat flour
2 teaspoons cumin
1 teaspoon chili powder
½ teaspoon ground coriander
¼ teaspoon cayenne pepper
½ teaspoon garlic powder

Directions:

  1. Preheat oven to 400 degrees F.
  2. Combine all ingredients in a medium bowl and stir until well-mixed.
  3. Scoop ¼-cup portions onto baking sheet lined with parchment paper, and press each one down to form flat cakes.
  4. Bake for 8-10 minutes, or until golden brown.
  5. Serve with your favorite sweet or savory toppings, like hot goat cheese crumbles or green apple slices.
