Healthy Fajitas

Servings: 4 (Size: 2 fajitas)

Ingredients:

1 pound boneless skinless chicken breast, sliced into ½-inch-thick strips
2 medium bell pepper, any color, cut into strips
1 medium onion, cut into strips
3 tablespoons lime juice
1 teaspoon ground cumin
1 teaspoon garlic powder
Pinch of chili powder
Salt and pepper to taste
2 teaspoons olive oil
8 reduced-carb, whole-wheat tortillas

 

Optional for garnish:

Reduced-fat shredded cheese
Reduced-fat sour cream
Guacamole
Salsa

Directions:

  1. Preheat oven to 425 degrees F. Spray large sheet pan with non-stick cooking spray, and set aside.
  2. In a large bowl, whisk together lime juice, ground cumin, garlic powder, chili powder, salt, pepper and olive oil.
  3. Add chicken, bell pepper and onion strips to seasoning mixture. Toss to combine.
  4. Spread contents of bowl onto greased sheet pan. Roast at 425 degrees F until chicken is fully cooked and bell pepper/onion reach desired tenderness (approximately 15 minutes, dpending on thickness of chicken strips).
  5. Remove meat and vegetables from oven and serve immediately with warm tortillas and desired toppings.
