Chili Lime Fish Tacos

Ingredients:

For the chili lime fish:
3 tablespoons butter, melted
juice of one lime
1 teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon sea salt
12 ounces fish of choice

 

For the peach salsa:
1 peach, chopped
¼ cup cilantro leaves, roughly chopped
¼ cup red onion, minced
half a jalapeƱo, seeded and minced
lime juice to taste
salt to taste

 

For the tacos:
corn tortillas
desired toppings

Directions:

  1. Defrost fish according to package instructions, if frozen. Preheat oven to 400°F.
  2. Whisk butter, lime juice, chili powder, garlic powder and salt together.
  3. Place fish in a small oven-safe dish, pour sauce over the top and bake for 15 minutes (or until fish is cooked through).
  4. While fish is cooking, toss ingredients for peach salsa together in a bowl.
  5. Remove fish from oven, flake into small pieces and toss with any sauce left in the pan. Bake for another 5 minutes so the sauce soaks into the fish.
  6. Spoon chili lime fish onto a corn tortilla, add peach salsa and top with any other desired toppings.
